Orgran Gluten Free Flour

 

I decided I wanted to make my girls good old fashioned Macaroni and cheese.

However, with a child who is dairy sensitive and a another who is gluten intolerant, I needed to find a flour that I could use to not only bake with but also make a White sauce with. Bring on ORGRAN !!

This flour is Gluten free, Wheat free, Dairy free, Dairy free, Egg free, Yeast free, Soy free, Nut free and Vegan, so it just about ticks most of the boxes. You can pretty much substitute this flour into any normal recipe and get the same results.

I did however have to experiment with the white sauce a bit. The general white sauce is simple, but the trick is to only start cooking the milk and flour once you have whisked them together properly.

My fussy eaters loved the Macaroni which is saying a lot, because they notice anything that is different.

Standard White Sauce

To start whisk 250ml Milk (dairy if you prefer or you can substitute with Rice Milk) and a quarter cup of Orgran plain flour in a pot until all lumps are gone. Turn on your stove onto a low heat and gently heat the mixture. Keep whisking gently all the time. The mixture will start to thicken, if there are a few lumps that pop up, remove it from the heat, whisk vigorously until the mixture is smooth. Return it to the low heat and continue to add another 300ml of milk in portions until you have reached your required consistency. Season to taste.

Macaroni and Cheese

Even though my Jess is no longer severely dairy allergic, she is still sensitive, so she can have dairy here and there but just not everyday for long periods of time. This means she gets to enjoy her favourite weekend food and so does my Abi who is Gluten intolerant.

Ingredients :

  • Half a cup of Orgran Gluten free flour
  • Packet Gluten Free noodles ( cook as per instructions)
  • 70g grated Cheese
  • Packet Bacon chopped with fat removed (optional)
  • Tsp Garlic
  • 900ml Milk (dairy or rice)

Directions :

1.  White Sauce – To start whisk 500ml Milk (dairy if you prefer or you can substitute with Rice Milk) and half a cup of Orgran plain flour in a pot until all lumps are gone. Turn on your stove onto a low heat and gently heat the mixture. Keep whisking gently all the time. The mixture will start to thicken, if there are a few lumps that pop up, remove it from the heat, whisk vigorously until the mixture is smooth. Return it to the low heat and continue to add another 400ml of milk in portions until you have reached your required consistency. Add your cheese and mix until melted into the sauce. Add your tsp of Garlic. Season to taste. (I used the rice milk to make the sauce and add the cheese, so it lessens the amount of dairy used in this recipe)

2. Cook the noodles as per instructions.

3. Mix cooked noodles, White sauce and chopped Bacon in a casserole dish and bake on 150deg cel for about 25mins.

You could use some of the allocated cheese to put on top of the noodle mixture to crisp in the oven but my kids don’t like it 🙂
